Gingerbread Banana Nut Bread . . . and Gingerbread Pancakes!

If you’ve lived long enough and spent any time in the kitchen, you will have at least once faced the conundrum of what to do with dead bananas. Eventually you either throw them out or make banana bread. I usually freeze the overripe bananas and eventually make banana bread.

A few months ago, I decided to do this, and wouldn’t you know it, I had no flour. It was cold and messy outside, and I didn’t want to go to the store. But, seeing as how I’m in the business of making a baking mix, what I did have on hand was plenty of gingerbread cookie mix.

Looking at any banana bread recipe, the flour, soda, salt, and spices that are required marry up nicely with what is in Ginger’s Breadboys Gingerbread Cookie Mix. So, I secretly used the gingerbread cookie mix to make banana bread. Must say, it was really good! (And no one in the household was the wiser.)

Fast forward a few months and the same thing happened. Only this time, I purposely made the banana bread with gingerbread cookie mix. I asked my husband for his opinion on the taste of both banana breads. He commented that both were delicious and spicy but what was readily apparent to him was the better texture. Well, “really good” flour and spices account for that!

Today, I’m making banana bread again, so I decided it was time to write this blog and tell you what happened next.

During the discussion about banana bread the conversation veered over into what other things one could make with the gingerbread cookie mix. The first thing that came up was gingerbread pancakes.

Now this wasn’t the first time this idea had come up. A few summers ago, my co-packers were on holiday at about the same time we were producing our gingerbread cookie mix. They were seeing all these baking mixes in country stores and sent a few pictures to me with the caption “Ideas for you.” So gingerbread pancake mix had been on my list.

But the conversation steered me into action to plan for some test baking.

The week after the gingerbread mix discussion, I met up with a fellow Pilates class member who had bought my gingerbread cookie mix at Christmas. She was all excited to tell me about how she and her friend had used the gingerbread mix for gingerbread pancakes and waffles for their daughters’ sleepover. She was gushing about how good the pancakes were and that the kids loved them!

Wow. When the universe begins a shift, it isn’t subtle on handing out the hints.

So, I test-baked gingerbread pancakes that Sunday and indeed they really were awesome! With a little maple syrup . . . yum!

I haven’t perfected the recipe yet, but it is coming along. Daresay it will probably be the product for 2025! Ginger’s Breadboys hopes to have the gingerbread pancake mix ready for you once the testing is complete. We think you’ll love them as much as we do.
